In a bowl, whisk the granulated white sugar, ground cinnamon and salt together.
Heat the honey in the microwave for 5-10 seconds or until it’s easily pourable. Whisk the lemon juice and honey together in a separate, medium sized mixing bowl.
Cut the Pink Lady apple into thin slices using a mandolin.
Place the apple slices into the bowl along with the lemon juice mixture and toss to combine. Once all apple slices have been tossed in the juice, lay them out on parchment paper in a single layer.
Put a single layer of apple slices into the air fryer basket. Do not let them overlap, make multiple batches if you need to.
Gently sprinkle the granulated white sugar and ground cinnamon mixture onto both sides of the apple slices.
Cook the apple slices in the air fryer at 300 degrees Fahrenheit for 8 minutes on one side and 3-4 minutes on the other or until the apples are light golden around the edges. The apples will firm up as they cool so you don’t need to cook them until they feel crispy.
Remove from the air fryer and cool before you plate and serve.

If your apples are really moist, you may need to add a little bit of extra cooking time.
A mandolin is helpful for slicing your apples, however a very sharp knife can also work well.
Don’t worry about making uniform shapes, but do try to get the slices to be the same thickness.
Before storing the chips, make sure they are completely cool. If they are still warm, they can collect condensation, which will cause them to become less crispy when you store them.
Your apple chips may not be fully crispy when done, but don’t worry, they will become crispier as they cool.
Cook time will depend on the thickness of your apple slices. If they are very thin they may cook a bit quicker.
