Twix Cookies are so easy to make and are filled with the classic candy bar flavors, in cookie form. A simple shortcut recipe using a sugar cookie mix, caramel, and chocolate saves so much time in the kitchen!
8ouncessemi-sweet chocolate chipsabout 1 heaping cup
Instructions
Preheat the oven to 350F and line a cookie sheet or two with parchment paper.
Mix the dough according to the package directions. Note: I used a stand mixer to get it going and then with a spatula to finish it off.
Drop 1 ½ tablespoon balls of dough and bake for 10 minutes with a non-stick or dark sheet. The cookies should be flattened with just a hint of golden color. Note: if you are using another surface the package may suggest baking them at a higher temperature for a shorter length of time.
Allow the cookies to cool at room temperature either on the sheet or on a wire rack once safe to transfer. Once all the cookies are fully cooled move them back to a cookie sheet that will fit in the fridge to assemble.
In a small microwave safe bowl over a pot with a little water, add caramels and heavy cream and melt on low, stirring consistently. Note: it could take up to 10 minutes for this amount of caramel.
Put a heaping tablespoon or more on each cookie, spread around as needed and refrigerate to cool. Note: I found it easier to do on the stove beside the caramel as it can harden quickly. You may find turn the burner off and then back on again as you work easiest. For an extra thick layer cool, add more, then cool again before moving onto the chocolate layer.
Repeat the same steps with the chocolate layer. Refrigerate for at least 20 minutes to cool and hold their shape.
Remove from the fridge at least 10 minutes prior to eat to soften up the caramel slightly.
