Strawberry Shortcake Truffles are easy to make using Golden Oreos mixed with cream cheese, Jell-O powder, and fresh fruit that quickly forms a batter to be scooped and dipped in chocolate. A delicious Valentine's Day dessert that's sweeter than a dozen roses!
216grams(1 package) Golden Oreoscrushed (finely crushed in food processor)
8ounceblock cream cheesesoftened
1cupfinely diced fresh strawberries
1tspstrawberry Jell-O powder
3cupswhite chocolate chips
Optional: sprinkles for topping
Instructions
In a large bowl, beat together crushed Oreos, cream cheese, strawberries and Jell-O powder until smooth.
Using a 2-tablespoon sized cookie scoop, scoop truffle batter into balls and place on parchment paper lined baking sheet.
Place baking sheet of truffles into freezer for a minimum of 2 hours to chill before dipping in chocolate.
Melt white chocolate in microwave. Start with 1 minute in microwave then stir well. If not fully melted, continue to heat on 30-second intervals until chocolate is melted.
Take truffles out of freezer just 3 at a time. They melt quickly which makes dipping in chocolate difficult so only remove 3 from the freezer at a time.
Fully coat truffles in white chocolate (top with sprinkles if desired) then place back on cold baking sheet and place back in freezer so chocolate can harden. Use a fork to dip the truffles in chocolate then lightly tap on side of bowl to remove excess chocolate before placing on baking sheet.
Let coated truffles set in freezer for at least 30 minutes before serving.

Storage:
To Store: Leftover truffles can be stored in a sealed food container in the fridge for up to a week.
To Freeze: Truffles can be stored in the freezer up to a month in a freezer-safe container. If serving directly from the freezer, let them sit at room temperature for a few minutes before eating.
Tips:
Make sure you freeze your truffles before coating them in chocolate! The balls must be chilled before you dip them or you will end up with a lot of crumbs in your melted chocolate and they won’t look quite as pretty!
Make sure the cream cheese is at room temperature. It makes much easier to mix into the crushed cookie crumbs.
Use a food processor to crush the Oreos into fine crumbs.
