This chocolate chip skillet cookie -aka Pizookie - is crispy on the edges, soft in the center, and loaded with gooey chocolate chips—best served warm with a scoop of ice cream.
Add softened butter, brown sugar and granulated sugar to mixing bowl, and blend on medium speed. Or, just mix the ingredients in the cast iron skillet or other baking pan, starting with melting the butter first on the stovetop, then adding other ingredients.
½ cup (1 stick) unsalted butter, 1 cup packed brown sugar, ½ cup granulated sugar
Add whole egg, plus yolk, and vanilla, and blend to combine.

Add the flour, salt, baking powder, and baking soda, a little at a time, and mix until fully combined. Add the chocolate chips and combine.

Spray a medium sized skillet (10-inch, or two 8-inch skillets) with non-stick baking spray. Spoon the batter into the skillet and spread it evenly with a spoon or spatula.
Place skillet in oven and bake for 20-24 minutes, depending on how thick the dough is, until just still slightly gooey in the middle and golden around the edges.
Remove from oven and allow to rest for about 10 minutes.
Top with scoops of Ice Cream, and drizzle Chocolate Syrup. Sprinkle with your favorite toppings if desired. Serve from the pan. Enjoy!

Pull your Pizookie from the oven when the edges are golden but the center still looks slightly underdone. It will continue to cook as it rests while maintaining the gooey middle.
Spread the dough evenly in the pan, but avoid pressing it down too much. A thicker layer creates that signature deep-dish feel and helps maintain a soft, molten center.
For simpler prep time (and fewer dishes), melt the butter directly in the skillet before mixing in the other ingredients. Plus, you get bonus skillet-baked flavor!
Storing Leftovers: Let your Pizookie leftovers cool completely, then cover the skillet tightly with aluminum foil or place individual slices wrapped in plastic wrap into an airtight container. It will keep in the fridge for up to 4 days.Reheating Tips: To get that fresh-from-the-oven texture, you can warm individual portions in the microwave for 20–30 seconds or pop the whole skillet back in a 350°F oven for 5–8 minutes until warmed through.
