Instructions
Add 7 cups of Rice Chex cereal to a large mixing bowl and set aside.
7 cups rice Chex cereal
Place the candy canes in a food processor and pulse until they’re finely crushed into small pieces. Set aside.
1¾ cups chopped candy canes
Add the chocolate bark to a microwave-safe bowl. Melt in the microwave in 20-second intervals, stirring well between each, until smooth and fully melted.
2 cups melted white chocolate
Pour the melted chocolate over the Chex cereal. Using two large spoons, gently toss to coat evenly, just like you would toss a salad.
Sprinkle the crushed candy canes over the coated cereal and stir until evenly coated.
Spread the mixture evenly onto a baking sheet and let the chocolate set completely.
Once set, break into pieces if needed and store in an airtight container.
Notes
Storage:
Store: Keep in an airtight container at room temperature for up to one week. You can refrigerate for up to two weeks if needed.
Make ahead: This recipe can be prepared up to three days in advance. Store in a sealed container at room temperature until ready to serve or gift.
Freeze: Place in a freezer safe container or resealable bag and freeze for up to three months. Thaw at room temperature before serving.
Tips:
Heat the chocolate in short 20 second intervals, stirring often to prevent burning or seizing.
Crush candy canes carefully. Aim for small pieces with a mix of fine crumbs and a few larger bits for crunch.
Once the chocolate is melted, move fast to toss and coat before it sets.
Use gentle motions. Fold with two large spoons to coat evenly without crushing the cereal.
Let the mixture harden fully before storing so it doesn’t clump together. I like to let it set for 20-30 minutes - if you are in a hurry pop the tray in the fridge for about 10 minutes to speed things up.
