Instructions
In a medium bowl, combine powdered sugar, peanut butter, and butter. Using a large spatula, stir to combine the ingredients.
Using a small portion scoop, cookie scoop, or shaping with hands, roll scoops into round balls of dough.
Place on parchment paper and refrigerate for about 15-30 minutes.
Once the dough has chilled, melt the chocolate in the microwave by heating for 30 seconds at time.
Dip the dough bites into the melted chocolate and then place them on wax or parchment paper. Sprinkle with desired topping and let them sit until the chocolate hardens

Tips/Notes
This recipe makes about 18-20 bites, depending on how big you roll them.
Don’t worry about the bites not being in perfect ball shapes. Once they are chilled, you can reshape them right before dipping them into the chocolate. You can also dip them twice for a thicker shell.
Melt half of the chocolate to use first. Depending on the size of your truffles you may not need an entire pound.
Any unused chocolate, I pour onto a piece of parchment paper and let it harden, then place it in a Ziploc bag to use later.
I sprinkled the tops with shredded sweetened coconut, crushed peanuts, melted white chocolate, and sprinkles. Sprinkle the topping onto the freshly dipped truffle before the chocolate is completely dried.
