Orange creamsicle salad is a cool, fluffy no-bake dessert that tastes like the popsicle. It comes together with orange gelatin, vanilla pudding, mandarin oranges, and marshmallows.
Using a medium size heat safe bowl, stir together the orange flavored gelatin and boiling water. Stir until the gelatin is completely dissolved.
3 ounces box orange flavored gelatin, 1 cup boiling water
Stir in the cold water. Place in the refrigerator for 15 minutes.

Remove the cooled gelatin from the refrigerator, and whisk in the vanilla instant pudding until completely incorporated. Cover the bowl and return to the refrigerator for 20 minutes.
3.4 ounces box vanilla instant pudding
Remove the bowl from the refrigerator. Fold in the whipped topping, drained mandarin oranges and mini marshmallows. Cover and return to the refrigerator and chill for 2 hours or overnight.
8 ounces tub whipped topping, 30 ounces (2 15-ounce) cans mandarin oranges, 2 cups mini marshmallows
Just before serving, garnish with the reserved mandarin oranges and mini marshmallows.

Storage:Leftovers keep tightly covered in the refrigerator for up to 3 days. If you find yourself with more than you can finish, pour it into popsicle molds and freeze for creamsicle-style pops, or spread it into a dish and freeze it to scoop like ice cream. Just know that the marshmallows change texture once frozen, so the salad itself is really at its best made fresh and eaten within a few days.Tips:
Let the jello cool and give the pudding layer 20 minutes to set before you fold in the whipped topping, oranges, and marshmallows. That is what keeps it firm and not watery. Drain the mandarin oranges well, and check your can sizes since two 15-ounce cans is what you want. This is better made the night before, so make it ahead if you can.
