Crockpot Marry Me Chicken slow cooks chicken breasts in a creamy herb and sun dried tomato sauce. A perfect special occasion dish that tastes delicious over pasta, rice, or vegetables.
Pour the oil into a skillet and heat it over medium-high heat. Add in the chicken and cook each side for 4 minutes. Transfer the chicken to the crockpot.
Add the garlic to the pan and cook for one minute. Deglaze the pan with the chicken stock.
Whisk together the heavy cream and cornstarch in a small bowl. Stir the slurry into the pan and allow it to simmer for 2 minutes. Pour the mixture into the crockpot.
Mix in the tomatoes, thyme, and red pepper flakes.
Set the crockpot to low for 5-6 hours or high for 3-4 hours.
Stir in the Parmesan cheese and top with the basil, and enjoy.
Notes
Storage:
To Store: Store the leftover Marry Me Chicken in an airtight container in the fridge for up to five days.
Tips:
If your sauce turns out too thick, you can add some extra chicken broth until you get a thinner sauce.
You can use dried thyme instead of fresh time, but you will only need 1/2 teaspoon of the dried thyme.
