Crockpot French Toast Casserole cooks itself in the slow cooker. A delicious breakfast of brunch dish that you can prep the day before and feed your crowd in the morning. No flipping needed!
Cover and place the slow cooker insert into the refrigerator to chill for 1 hour to allow the bread to soak up the juices. You can also leave it covered overnight.*
Sprinkle the brown sugar evenly across the top of the bread and dot with the butter cubes across the top.
½ cup light brown sugar, ¼ cup unsalted butter
Cover the slow cooker and cook on high for 1-2 hours, or low for 2-4 hours, until the bread egg mixture is fully cooked.
Serve immediately with maple syrup, fruit compote or powdered sugar, enjoy!

Make-Ahead The Mixture: Feel free to leave bread and egg mixture in a covered mixing bowl when chilling in the fridge. Then transfer it to the crockpot when you're ready to cook. You can also cover and place the slow cooker insert in the refrigerator if you prefer. Make sure to let it come to room temperature before placing it in the slow cooker so it doesn't crack when cooking.
The best base is day-old or stale bread. Stale bread has lost some moisture, which allows it to soak up more of the flavorful spice and milk mixture.
Make With Mix-Ins: You can add extra spices or mix-ins to your french toast casserole, such as chocolate chips, diced apples, raisins, or chopped nuts.
