Frozen chocolate covered banana bites are a healthy homemade snack! Frozen fruit sandwiches with the perfect combination of carbs, protein, and healthy fats to keep you fueled and full in between meals or after dinner.
Cut each banana into equal size slices and place the slices on the baking sheet. Allow the bananas to chill in the freezer for 15 minutes.
Remove the tray of banana slices from the freezer and place a dollop of peanut butter on half of the slices. Top the peanut butter with the remaining slices so that each pair of slices form a sandwich. Place the tray back in the freezer for 15 minutes while you prep the chocolate.
In a medium sized mixing bowl, melt the chocolate chips with the coconut oil in the microwave on 30 second intervals until the chocolate is fully melted. Stir thoroughly after each interval.
Remove the tray from the freezer again and dip each banana bite in the chocolate before topping with peanuts. Place each bite back on the tray and freeze for an additional 30 minutes.

Tips:
You can use bananas at any stage of ripeness. However, the riper the bananas are, the harder it will be to cut them into clean slices since the bananas will get softer the more ripe they become.
I like to use smooth peanut butter because I found that it helped keep the banana slices together better than crunchy peanut butter, which is why I opt to just add a few crushed peanuts to the top of each banana bite.
The number of bites you end up with will depend on how thin or thick you make your banana slices. You don’t want them to be too thick, otherwise they will be hard to work with without breaking in half.
