Birthday Cake Kiss Cookies are coated in colorful sprinkles and topped with a melted Hershey kiss in the middle. Easy to make in minutes, this shortcut recipe is the perfect sweet treat for birthday parties and special celebrations.
Line two large baking sheets with parchment paper and preheat the oven to 350 degrees Fahrenheit.
Using a hand or stand mixer, beat together the white cake mix, eggs and melted butter until a smooth dough forms.
Allow the dough to sit for about 5 minutes and then scoop out the cookies with a 1 ½ Tablespoon cookie scoop and roll into balls.
Pour the rainbow sprinkles or non-pareils into a shallow bowl and roll each cookie ball in the sprinkles until well coated before placing on the prepared baking sheet(s).
Be sure to keep about 2 inches of space between the cookies.
Bake for 7-11 minutes or until the edges begin to turn golden brown and get firm.
Remove from the oven and allow the cookies to cool for 2-3 minutes.
Press an unwrapped Birthday Cake Kiss into the center of each cookie and remove from the baking sheet.
Cool completely on a cooling rack or serve warm.

To Freeze: You can freeze your cookies in a freezer safe bag for 2-3 months.

You can change up the base cake mix flavor for any birthday theme. It will change the color and flavor of your cookies but they will all be delicious!
These cookies are best served thawed or warmed to room temperature. The kiss may get hard when chilled.
