Ingredients
4chicken breasts (about 2 pounds)
4tbspolive oil
3tbsphoney
2tbspapple cider vinegar
2tbspDijon mustard
4tsplemon-pepper seasoning
4tspsalt
¼tsppepper
Instructions
Place chicken in a ziploc bag, press the air out, and seal. (The chicken could also be placed between plastic wrap.) This is to help minimize the mess. Using a meat tenderizer (smooth side) or a rolling pin, pound the chicken until it is a consistent thickness, 1⁄4 to 1⁄2 inch in thickness. This helps with consistency in cooking and also reduces cooking time. It also relieves stress.
In a small bowl, combine the remaining ingredients. Set aside.
Place chicken In a gallon size ziploc bag and seal. Lay flat on a plate or platter, refrigerate, and marinate 30 minutes to 4 hours.
Heat grill to at least 300 degrees, but not more than 350. While grilling, try to maintain the temp to at least 300 degrees.
Remove chicken from bag and place on grill. No need to pat dry before doing this.
Place chicken on grill, close grill lid, and cook for 4 to 5 minutes on one side. Turn chicken, insert meat thermometer into one of the pieces, and close the grill lid.
When the internal temperature of the chicken is 165 degrees, remove it from the grill. Let rest 5 minutes before slicing.
Notes
Note: The lemon flavor for the marinade turns out to be quite light. If you prefer a stronger lemon flavor, add 1 tablespoon to the marinade. But be careful about adding more lemon-pepper seasoning to accomplish, since this seasoning has other flavors in it besides just lemon.
