These Funfetti Whoopie Pies bring a whole rainbow of colors and sprinkles to the traditional whoopie pie recipe! Some may call them Unicorn Whoopie Pies or Rainbow Whoopie Pies, but I just call them delicious! Cake-like sandwich cookies filled with cream - Count me in!

Ingredients
Whoopie Pies
1boxfrench vanilla cake mix
½cupunsalted sweet cream buttersoftened
1large egg
½cupfunfetti sprinkles
Frosting
½cupunsalted sweet cream buttersoftened
1 ½cuppowder sugar
1tspvanilla extract
4tbspheavy whipping cream
blue, pink and purple food gel
Instructions
Whoopie pies:
Preheat your oven to 350 degrees
In a standing mixer or electric hand mixer, combine all ingredients, in a large bowl, except the sprinkles and mix until combined and smooth
Using a rubber spatula, mix in the sprinkles
Using an ice cream scoop, scoop out some dough and roll it into a ball
Place dough ball onto the cookie sheet and lightly push down into a thick disk
Repeat steps with remaining dough
Bake in the oven for 8-10 minutes or until lightly golden brown
Once baked, set aside and allow to cool completely on a wire rack
Frosting:
Using the mixer, combine all ingredient except the food gel.
Mix on medium speed until creamy and stiff with peaks
Split the frosting into 3 bowls and add a few drops of the food coloring into a bowl each.
Mix the frosting until the color is completely mixed.
Scoop the frosting into piping bags and cut the tips off
Pair up the cookies
Using the bottom of one cookie, pipe a small dollop of frosting on the flat side, sandwich the cookies and enjoy!
