Caramel Popcorn Sugar Cookies

Ingredients
For the Dough:
1 ¼
cups
granulated sugar
½
cup
brown sugar
½
softened unsalted butter
1
teaspoon
vanilla extract
1
large egg
1 ¾
cups
flour
1
teaspoon
baking soda
¼
teaspoon
of salt
For Caramel Popcorn to mix in
⅓
cup
finely crushed hard caramel candies
about 12 candies, like Werther's original
⅛
teaspoon
salt
1
mini bag plain microwave popcorn
or approximately 3 cups of air popped popcorn
Instructions
Preheat oven to 350 degrees
Combine sugar, brown sugar, butter and vanilla in a large bowl
Beat with a mixer at medium speed until fluffy
Add egg to mixture and beat until just blended
Beat in flour and 1/4 teaspoon salt
Stir in crushed hard caramel candies and 1/8 teaspoon salt
Pop popcorn according to directions on package
Stir in 3 cups prepared popped popcorn with a rubber spatula
Drop a tablespoon of dough on parchment paper lined cookie sheets (2 inches apart)
Bake 10 - 12 minutes or until lightly browned
