Ingredients

Streusel ingredients:

  • 1 1/2 cup flour
  • 1/2 cup light brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup unsalted sweet cream butter (melted)
  • 1/2 tsp pure vanilla extract

Apple Cake ingredients:

  • 2 large granny smith apples (peeled, cored, and diced small)
  • 1/2 cup unsalted sweet cream butter (softed)
  • 1 cup sugar
  • 2 large eggs
  • 2 tsp vanilla
  • 1 cup full fat sour cream
  • 2 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 tsp baking powder

Cinnamon apple glaze ingredients:

  • 1/2 cup powdered sugar
  • 2 tbsp apple cider
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 350 degrees and line the bottom of a 9 in springform pan with parchment paper and spray the insides of the springform pan with baking spray, set aside

Streusel

  1. Using a medium bowl, add the flour, brown sugar, cinnamon, and nutmeg and whisk until combined

  2. Mix in the melted butter and vanilla and then set aside

Cake

  1. Using a standing mixer or hand mixer, cream together the butter and sugar until combined

  2. Add in the egg, one at a time, beating well after each egg
  3. Mix in the vanilla and sour cream until combined
  4. In a medium bowl, whisk together the flour, baking soda, salt and baking powder until combined.

  5. Gradually mix in the dry ingredients with the wet until combined

  6. Scoop half of the cake batter into the prepared springform pan
  7. Spread your diced apples on top of the batter
  8. Sprinkle half of your streusel onto the apples
  9. Pour remaining cake batter on top of the streusel and top with the rest of the streusel

  10. Bake in the oven for 40-55 minutes or until a toothpick comes out clean
  11. Allow to cool completely on the counter before removing springform pan. Note: run your knife around the edge to loosen things up a bit before removing the pan.

Icing

  1. In a small bowl, whisk together the powdered sugar, apple cider and cinnamon until combined and smooth

  2. Drizzle onto the cooled cake and enjoy!
