– Chicken broth – Can of southwest corn with poblano and red peppers – Mild Rotel diced tomatoes and green chilies – Ranch seasoning mix – Onion powder – Chili powder – Kosher salt – Black pepper – Chicken breasts – Black beans – Smoked bacon – Cream cheese – Colby and Monterey jack cheese

INGREDIENTS

Whisk together the chicken broth, southwest corn, Rotel, ranch mix, onion powder, chili powder, salt, and pepper.

Lay the chicken breasts in the bottom of the crock pot, cover with the black beans, pour the broth mixture over the black bean layer.

Sprinkle with bacon, and top with cream cheese. Cook on high for 4 hours or 6 hours on low.

Remove the chicken breasts and shred the chicken with 2 forks.

Stir the contents of the crock pot until the cream cheese is mixed in and melted. Stir in the shredded cheese, add in the shredded chicken, and stir to combine.
