These homemade, hand-held, bite-size treats are so easy to make with crushed Golden Oreos mixed with cream cheese, fresh strawberries, and Jello-O powder then formed into balls before being dipped in white chocolate.

The Jell-O powder adds an extra hint of sweet berry flavor to the creamy batter and produces a pretty pink color that surrounds the studs of strawberries.

How to Make the Strawberry Shortcake Truffles

This no-bake Strawberry Shortcake Truffles recipe is so easy to make: simply combine crushed Golden Oreos with cream cheese, berries, and Jell-O powder to form a batter, then scoop into balls, chill, dip, and decorate.

  1. Beat together crushed Oreos, cream cheese, strawberries, and Jell-O powder until smooth.
    Pro-Tip: Use dry Jell-O powder, not prepared Jell-O. Use a food processor to crush the Oreos into fine crumbs. Make sure the cream cheese is at room temperature. It makes much easier to mix into the crushed cookie crumbs. 
  2. Scoop the batter into balls with a 2-Tablespoon cookie scoop and place on prepared baking sheet.

  3. Place baking sheet of truffles into freezer for a minimum of 2 hours to chill.
    Pro-Tip: Make sure you freeze your truffles before coating them in chocolate! The balls must be chilled before you dip them or you will end up with a lot of crumbs in your melted chocolate and they won’t look quite as pretty!
  4. Melt white chocolate in microwave for 1 minute and stir well, then continue to heat in 30-second intervals until chocolate is melted. 
  5. Remove truffles from the freezer, 3 at a time, and fully coat each in white chocolate.
    Pro Tip: The truffles melt quickly which makes dipping in chocolate difficult, therefore only remove 3 from the freezer at a time. It’s easiest to use a fork to dip the truffles in chocolate, then lightly tap on side of bowl to remove excess chocolate. 
  6. Top truffles with sprinkles (optional) and place them back on the baking sheet in the freezer to harden.
  7. Continue coating truffles, 3 at a time, until all are covered in chocolate.
  8. Let coated truffles set in freezer for at least 30 minutes before serving.

Ingredients
  

  • 216 grams (1 package) Golden Oreos crushed (finely crushed in food processor)
  • 8 ounce block cream cheese softened
  • 1 cup finely diced fresh strawberries
  • 1 tsp strawberry Jell-O powder
  • 3 cups white chocolate chips
  • Optional: sprinkles for topping

Instructions
 

  • In a large bowl, beat together crushed Oreos, cream cheese, strawberries and Jell-O powder until smooth.
  • Using a 2-tablespoon sized cookie scoop, scoop truffle batter into balls and place on parchment paper lined baking sheet.
  • Place baking sheet of truffles into freezer for a minimum of 2 hours to chill before dipping in chocolate.
  • Melt white chocolate in microwave. Start with 1 minute in microwave then stir well. If not fully melted, continue to heat on 30-second intervals until chocolate is melted.

    I just mixed up the ingredients and found that only 1/2 cup of chopped strawberries should be used.

  2. I am so excited to make these, is the jello adding flavor or is it mostly for color? My 7 year old has an issue with red dye so I’d love to use strawberry flavored Quik instead.
