Hey there Princess Pinky Girl readers! Serene from House of Yumm back with you. Who’s ready for Fall?? I know I am! I have a pair of boots in the closet just calling my name. Boots and flannels and scarves oh my! To get us all into the mood I thought I would share this Pecan Pie Oatmeal recipe with you today. I am a huge supporter of dessert for breakfast, and while I do sometimes indulge in full on dessert for breakfast, a healthy version is more than enough to make me happy for the rest of my day. Especially when oatmeal is involved.

I made a Pumpkin Pie Oatmeal last year, so this year I went for a Pecan Pie Oatmeal version. Nothing more fun than switching up boring oatmeal with some tasty additions. It’s one of my favorite breakfasts due to how easy it is to dress up. I did use milk in my recipe, however, this can be subbed for any kind of dairy free milk or even water if you choose. And there’s brown sugar. Which I love! It gives such great depth to the flavors, and just melts into the warm oatmeal. However, again this can be swapped out to be agave or honey if you prefer. Just keep in mind there will be a difference in the flavor if you use either of those. But it does make it healthier.

Such a hard choice for me sometimes! Depends on how I’m feeling that day. The one thing that must remain is the pecans!!! Lightly toasted in a skillet, oh my! And if you’re feeling up to it you can always toss in a bit of butter with just the slightest pinch of salt. If you’re nodding your head in approval at that thought then I know we are going to get along just fine.

Pecan Pie Oatmeal

Pecan Pie Oatmeal

Serves — 2
The feature of this Pecan Pie Oatmeal is the toasted oats. And when paired with the brown sugar and cinnamon, this dish resembles a decadent pecan pie, only in a healthy breakfast form!
Cook Time 5 minutes
Total Time 5 minutes

Ingredients
  

  • 1 cup old fashioned oats
  • ¾ cup milk or water
  • teaspoon cinnamon
  • 1 tablespoon brown sugar
  • ¼ teaspoon vanilla extract
  • ¼ cup chopped toasted pecans

Instructions
 

  • Add the pecans to a skillet and heat over low heat stirring until a toasted brown color. Set aside to cool.
  • Pour the old fashioned oats and milk into a medium sized bowl. Microwave for approximately 1 minute or until oats are softened.
  • Add the brown sugar, cinnamon, and vanilla extract. Stir to combine.
  • Add in some of the toasted pecans and mix into the oatmeal. Top with remaining pecans.
  • Serve immediately and enjoy!
