No-bake Peanut Butter Pretzel Bites bring together my favorite sweet and salty combination in mere minutes. This easy recipe is made using 7 simple ingredients – it’s a fun way to serve a snack of peanut butter that’s been stuffed between two pretzels and dipped in dark chocolate.

This Peanut Butter Pretzel Bites recipe has a smooth and creamy peanut butter filling sandwiched between mini pretzels and dipped in chocolate.

I love the contrasting tastes and textures in this bite-sized snack; it’s sweet and salty meets smooth and crunchy, paired perfectly with melt in your mouth chocolate.

Peanut Butter Pretzel Bites are similar to my Buckeye Fudge, Buckeye Brownies, and Buckeye Bars, but instead of having separate layers poured into a pan and served in slices, the mixture is packed between the pretzels and partially coated in chocolate.

  • Salted butter: If you decide to use unsalted butter, make sure you add an extra pinch of salt to balance the flavors.
  • Granulated white sugar: Replace this with light brown sugar if you prefer.

How to Make Peanut Butter Pretzel Bites

No-bake Peanut Butter Pretzel Bites are a delicious sweet and salty snack, easily prepared in perfectly-portioned packages. It is so simple to stuff your pretzels with a peanut butter filling and make mini chocolate-dipped sandwiches.

  1. Make The Peanut Butter Mixture: Beat together the peanut butter, butter, white sugar, salt and powdered sugar until fully combined.
  2. Scoop and Sandwich: Roll the peanut butter mixture into a ball. Sandwich the peanut butter ball between 2 pretzels and gently press them together.
  3. Freeze: Place sandwiches on the prepared sheet pan and freeze for 30 minutes.
    Pro Tip: You can also use the refrigerator for this step.
  4. Melt The Chocolate: Microwave the chocolate chips until fully melted.
    Pro Tip: Be sure to stir in-between each interval so that your chocolate doesn’t seize up.
  5. Dip: Dip the pretzel sandwiches halfway into the melted chocolate and sprinkle them with sea salt, optional. 
  6. Set and Serve: Return the pan to the freezer for 15 minutes to allow the chocolate to set. Serve immediately or store in the refrigerator until ready to serve. Serve chilled. Enjoy!

Tips

  • You can make these pretzel bites with any shape of pretzel, but keep in mind that they are sandwiches so I wouldn’t try this with pretzel sticks or pretzel rods.
  • Make sure your sheet pans are lined with parchment paper before you start to help keep these bites from sticking and also with the cleanup.
  • It may be difficult to fit all 36 bites on one large sheet pan or to fit your sheet pan in the freezer. If that’s the case, feel free to use two or more smaller sheet pans.

Can I use wax paper instead of parchment paper?

Because these don’t go into the oven, feel free to use wax paper instead of parchment paper (or I love to use a silcone baking sheet). Wax paper can’t be used in ovens because it burns, but since these bites are chilled and not heated, you don’t need to worry about that. 

Can I cover my entire pretzel bite sandwich in chocolate?

Yes, when dipping your bites into the chocolate, feel free to dip them more than just halfway. I also like to use a spoon to drizzle the chocolate for a different look. Just make sure to let excess chocolate drip off the pretzels before you place them back on the sheet pan.

Can I replace the peanut butter with nut-free butter?

Yes, you can use your favorite nut-free butter in this recipe. You will still get the same delicious results with a slightly different flavor.

Ingredients
  

  • ½ cup creamy peanut butter
  • 3 tbsp salted butter softened
  • 2 tbsp granulated white sugar
  • ½ tsp salt
  • ¾ cup powdered sugar
  • 72 mini twist pretzels
  • ¾ cup dark chocolate chips
  • Sea salt optional garnish

Instructions
 

  • Use a stand or hand mixer to beat the creamy peanut butter, salted butter, granulated white sugar, and salt together in a medium sized mixing bowl, until fully combined.
  • Gradually beat in the powdered sugar on a low setting until you have a soft dough.
  • Set out a large sheet pan that will fit in your freezer and line it with parchment paper.
  • Scoop out ½ Tablespoon of the peanut butter mixture and roll it into a ball.
  • Use two pretzels to create a sandwich with the peanut butter ball and gently press the pretzels towards each other until you create a ½ inch thick sandwich. Repeat with the remaining peanut butter dough, it should make about 36 sandwiches.
  • Place all 30 sandwiches on the prepared sheet pan and freeze for 30 minutes (you can also use the refrigerator for this step).
  • Once the sandwiches have set, place the dark chocolate chips in a microwave safe bowl and microwave them in increments of 15 seconds until fully melted, about 2-3 minutes total. Be sure to stir in-between each interval so that your chocolate doesn’t seize up.
  • Once the chocolate has melted, dip the peanut butter pretzel sandwiches halfway into the chocolate and then set them back on the parchment paper and sprinkle them with sea salt, optional.
  • Once all bites are finished, return the sheet pan to the freezer for 15 minutes to allow them all to set.
  • Serve immediately or store in the refrigerator until ready to serve. Serve chilled.

    Tasty, but a messy disaster. Followed recipe as written, but peanut butter concoction just to sticky to form into a ball before squishing between the 2 pretzels. this even after letting it sit in freezer to solidify. Of course the holes in the pretzels proved to also be a nemesis. I did the best i could but they were messy and peanut butter was everywhere. Won’t likely make them again, but they did taste good regardless.
