Mexican Casserole is an easy weeknight dish that curbs the craving for Mexican-style cuisine. If your family is like mine, you crave Mexican food on a regular basis. This is the perfect casserole that can be put together quickly any night of the week.

This layered dish is made with all of the go-to taco ingredients such as corn chips, ground beef, salsa, and cheese. Finished off with your favorite taco toppings. It truly hits the spot every time, and couldn’t be easier to throw together!

  1. Ground beef

  • GROUND BEEF: Feel free to use ground chicken or ground turkey as a substitute for ground beef. 
  • CHEESE: You can use any type of shredded cheese that you like. Sometimes I like to combine pepper jack and cheddar cheeses for this recipe!
  • FRITOS: I like to use Fritos as a substitute for the tortilla corn chips, they have such a great flavor and add a little something extra to this recipe.
  • TOPPINGS: Optional toppings could be olives, chopped tomatoes, shredded lettuce, green onions, additional sour cream and corn chips

How to make Mexican Casserole

This recipe comes together quickly in just 15 minutes of prep. It’s so easy to gather the ingredients and layer them in a casserole. Then, simply pop in the oven to bake!

  1. Brown the ground beef with the chopped onions and garlic. Add garlic salt and taco seasoning to the meat and stir. Stir in the beans, corn, and chilies. Stir until heated through.
  2. Fill the bottom of a prepared pan with corn chips. Spoon the meat mixture over the chips.
  3. Drop the sour cream by spoonfuls over the meat mixture, spread around. Pour salsa over the sour cream.
  4. Sprinkle cheddar cheese over the top.
  5. Bake at 350 degrees for 30 minutes, or until the cheese melts.

  • To Store: Store any leftover casserole in an airtight container in the fridge for up to 5 days.
  • To Freeze: Leftovers can be frozen for up to 3 months in an airtight freezer safe container. Be sure to let the casserole thaw in the fridge before reheating.
  • To Reheat: You can reheat leftovers in a baking dish in the oven at 350, or simply pop the leftovers in the microwave!

What to serve with Mexican casserole?

I love to serve this casserole with a side of Spanish rice. It just adds a little something extra. It’s even delicious to mix the rice into the casserole. You can go wrong serving it with chips and salsa, such as our corn salsa, and guacamole. Another delicious side is homemade Mexican street corn salsa. Yum!

Can I make Mexican casserole ahead of time?

I wouldn’t recommend making this entire casserole ahead of time, but if you’re looking to cut down the prep time, you can most definitely prepare the ingredients ahead of time. Cut up the onions and cook your ground beef. That way when you are ready, all you have to do is assemble the casserole and cook!

Ingredients
  

  • 1 pound ground beef
  • 1 small onion chopped
  • 1 tsp garlic minced
  • ½ tsp garlic salt
  • 2 tbsp taco seasoning (or your favorite taco seasoning package)
  • 4 ounce can green chilies
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen
  • 2 cups sour cream
  • 24 oz jar of salsa your favorite style
  • 9.25 oz bag corn chips (reserve out ½ cup for topping if desired)
  • 2 cups cheddar cheese
  • Optional serving toppings: Olives, chopped tomatoes, shredded lettuce, green onions, additional sour cream, crushed corn chips

Instructions
 

  • Preheat oven to 350 degrees.
  • In a large skillet brown the ground beef with the chopped onions and garlic. Drain off any extra grease.
  • Add the garlic salt and taco seasoning to the meat and stir to mix.
  • Stir in the beans, corn and green chilies and stir until heated through. Set aside.
  • Spray the bottom of a 9×13 pan with nonstick spray.
  • Fill the bottom of the pan with corn chips.
  • Spoon the ground beef mixture over the chips.
  • Drop the sour cream by spoonfuls over the meat mixture and spread around.
  • Pour the salsa over the sour cream.
  • Sprinkle the cheese over the top.
  • Bake at 350 degrees for 30 minutes or until cheese melts.
  • Remove from oven and let sit for 10 minutes before serving.
