Yvonne here from Tried and Tasty bringing you another delicious recipe! Do you like the flavors of curry? This Chicken Coconut Curry is an easy recipe and is perfect for you. All you need is some chicken, veggies, and a few other key ingredients. Serve it over rice and enjoy any weeknight. Great for the family, great for get togethers, great anytime. We probably have this once every couple of weeks we love it so much. Granted, we love almost anything Indian or Thai, so it just so happens to be right up our alley. Hopefully you’ll enjoy it too.
Chicken Coconut Curry
- 6 boneless skinless chicken breast
- 3 (13.5 oz) cans coconut milk
- 6 tbsp. coconut sugar
- 3 tbsp. coconut oil
- 4 tbsp. curry powder
- 1 1/2 tsp. salt
- 2 red bell peppers, sliced
- 6 c. frozen veggies
Cut chicken into small strips and cook with a tablespoon of coconut oil in a large pan over medium heat. In a large pot, combine coconut milk, coconut sugar, two tablespoons of coconut oil, curry powder, salt, and frozen vegetables. Stir ingredients together and begin lightly simmering on a low-medium heat. Once chicken is cooked, add to the large pot containing coconut milk, etc. and continue to lightly simmer ingredients for 25 minutes. Slice the red bell peppers into strips and add to large pot containing the other ingredients and simmer for an additional 5 minutes. Serve on top of a nice jasmine or basmati rice and enjoy!
