Now that summer is officially here, so is the warm weather. While the kids are grabbing Popsicles, I’ll be grabbing one of these yummy Mint Chocolate Yogurt Bars.

Mint Chocolate Yogurt Bars

I have a love of all things mint chocolate. Thin mints, mint melt-aways from our local candy store, and even mint chocolate coffee creamer. Yum! I was thinking about how I could make this delicious combination a tad bit healthier and these yummy yogurt bars popped into my mind. Despite how decadent they look, they are super simple to make.

They require just a few ingredients:

You’ll want start off by mixing your tub of Greek yogurt with 1 1/2 teaspoons of peppermint extract and a couple drops of green gel food coloring.

Now that summer is officially here, so is the warm weather. While the kids are grabbing Popsicles, I'll be grabbing one of these yummy Mint Chocolate Yogurt Bars.

Place about 6 chocolate chips into the bottom of each mold, then fill your molds halfway with your mint flavored yogurt. Place a few more chocolate chips in the center then fill the rest of the mold with your yogurt. Now top your pops off with a few more chocolate chips. Place the lids on the pops and gently tap your molds onto the counter to get rid of any air bubbles. Set in the freezer for about 6 hours or overnight.

To remove your frozen pops, place the plastic mold under running hot water for about 15 seconds to loosen them. Pull on the sticks and they should slide right out. Melt your chocolate wafers in a coffee cup for 2-3 minutes on 50% power, stirring every 30 seconds until melted. Dip the top of your frozen pops into the chocolate, sprinkle a few crushed almonds onto the chocolate, then place them on a piece of parchment paper till the chocolate is hardened. Eat right away, or return them to the freezer until you’re ready to enjoy.

Once you try these, You’ll be happy you don’t have to wait until February or March for those Girl Scouts to come knocking on your door!
